my wife spent a good amt of money on a set of ja henckels knives. Initially I thought it was money well spent, but as I used the chef knife more, I realized that the steel did not hold an edge for too long. I'm sharpening the steel each time I have to carve. Any suggestions on a good chef knife?

....mine is a Marlin XL7 bolt action in .270. This rifle is awesome and I feel the ,270 cartridge is perfect for white tail deer. Every deer I smacked with this set up, dropped within 25 yds or so
